The Wheat Fields, 440 Broadway, Saratoga Springs, 587-0534. Mostly pasta-based cuisine straddling Italian and continental traditions. Pasta made on premises; meat and seafood entrees available as well. Diner-friendly wine list. Serving Mon-Fri 11:30-10, Sat 11:30-10:30, Sun noon-10. AE, D, MC, V.

A Taste of Greece, 193 Lark St., Albany, 426-9000. Traditional Greek fare (gyros, spanakopita, moussaka and the like) and tasty original dishes with a Greek accent. Serving Mon-Thu 11-9, Fri 11-10, Sat 2-10. AE, D, MC, V.

Castelo’s, 183 Nott Terrace, Schenectady, 374-0581, Greek, Italian and American offerings, ranging from sandwiches to moderately priced entrées, served in a bustling room not far from Schenectady’s downtown. Serving Mon-Thu 11-10, Fri-Sat 11-11, Sun 11-9. AE, C, MC, V.

Bavarian Chalet, Route 20 and French’s Mill Road, Guilderland, 355-8005. A handful of traditional German dishes alongside some continental fare and a pub menu. Great selection of beer, German and otherwise. Serving dinner Wed-Fri 4-9, Sat 4-10, Sun 3-8. AE, D, MC, V.

Lombardo’s, 121 Madison Ave., Albany, 462-9180. Old-fashioned Italian fare enthusiastically served in an old-
fashioned landmark restaurant. Serving Mon-Fri 11-1, Sat 3-11. AE, CB, D, DC, MC, V.

George Mann Tory Tavern, Routes 30 and 443, Schoharie, 295-7128. Elegant, innovative American fare served in a beautifully restored Colonial estate. Serving dinner Wed-Sat 5-9, Sun 1-7. AE, D, DC, MC, V.

Saso’s Japanese Noodle House, 218 Central Ave., Albany, 436-7789. Noodle soup is a specialty, but the sushi is terrific and the entrées boast a tasty, creative variety. Serving lunch Tue-Fri 11:45-1:30, Tue-Thu 5-9:30, Fri-Sat 5-10. AE, D, MC, V.

Parisi’s Steakhouse, 11 N. Broadway, Schenectady, 374-0100. Excellent steaks along with a full menu of innovative Continental fare, with chef Danny Petrosino at the helm. Serving lunch Tue-Fri 11:30-2, dinner Tue-Thu 4-9 (or later), Fri-Sat 4-10 (or later). AE, CB, D, DC, MC, V

Mexican Radio, 537 Warren St., Hudson, 828-7770. The triple enchiladas mole platter alone is enough to commend it, but the fusion approach to Mexican fare, all based on fresh ingredients, made this a Manhattan favorite even before its upstate branch arrived. Serving daily 11:30-11. AE, MC, V.
